Fluffy gluten free buckwheat bread

A little expemiment that turned out very well! Fluffy and perfekt with cream cheese or just butter. Not much carbs, no yeasing and incredibly simple. 
 
Recipe 
1 1/2 dl flax seed
1 1/2 dl quinoa flakes
1/2 dl Psyllium seeds
2 dl buckwheat flour
2 tsp baking soda
~5 dl water
2 egg whites
A few pinches of salt
 
Pour boiling water over the flax seeds and leave it to swell for a while. Combine all the remaning dry ingredients and add it to the mixture. Lastly, add the egg whites and salt and stir well. The dough should be kind of gooey. Spread the dough on a baking sheat in a square pan (make it about 1.5 cm thick), sprinkle some sea salt on top and bake it on 150 degrees for 30 min. Let the bread cool compleatly before cutting it into squares or some other shape. Munch!
