Blueberry celebratory cake!

The last exams before summer is done, we have completed half of our studie time and it´s summer! No more reasons for making a cake is required. I don´t have an oven in my mini-apartment so I couldn´t make my own sponge cake. The ones you buy at stores dosen´t really measure up to the home made kind, but they are ok I guess. I bought two to get a taller cake and more yummy layers.

Recipe for the fillings and topping
Custard
3 egg yolks
1 tbsp cornstarch
1/2 dl sugar
1 tbsp vanilla extract
3 dl full fat milk
+
1 dl heavy cream

Beat egg yolks with starch, sugar and vanilla so that there is no lumps left. Add milk to the mixture and heat up (not to boiling, the eggs will coagulate) while stiring troughout until the custard is thick. Let it cool and add whipped cream to get it fluffy.

Orange- and cinnamon curd
The juice from 1 large orange
2 tbsp cornstarch
2 tbsp sugar
A pinch of cinnamon
+
1 dl heavy cream

Beat all the ingredients except the cream and heat up until it thickens. Stir frequently to avoid lumps. Let it cool completly and add whipped cream (YES I like whip cream).

For the star of the cake, the blueberries, I just mixed a hole lot of home made blueberry jam (about 5 dl) with juice and zest from 1 eco lemon. Lime would also do, or you could use fresh blueberries and just add a tiny bit of sugar to maintain that natural sourness.

For garnish
4 dl heavy cream
Berries or fruits

Layer the three fillings, garnish with whipped cream and something beautiful. I used blueberries, strawberries and some lavender- and strawberry flowers.
